A sunrise hike up Lille Malene

It all started at the Art Museum.

I mentioned that I was the only one in the museum at the time, and that meant that I effectively got a private tour? Well, we exchanged numbers at the end, with the promise to get dinner some evening before I left.

That did end up happening, but before we could even send a “Hello, how are you?” message, I ran into her again out around town. Turns out she had been grocery shopping, but had lost her wallet somewhere along the way… and was freaking out more than a little bit. Since my only plan for the afternoon was to wander around town, I offered my emotional support for the scavenger hunt… support which was readily accepted.

A frantic hunt ended at her house, finding the wallet safely tucked away on top of a dresser. Which then led to my invitation to a dinner party with a whole group of exchange students, and a follow-on invitation to a 4am hike up a nearby mountain to watch the sunrise.

I… realistically should have declined, and made sure to get the standard requisite sleep that a newly-minted long-term traveler really needs. But, equally realistically, this was exactly the type of spontaneous adventure that I had hoped I’d find when I first came up with the idea of this whole trip.

We spent the evening chatting among friends – Primarily English (thank you, everyone!) with a smattering of Danish, German, and French when English couldn’t suffice. I had brought my photo album, which was received with flying accolades (At one point the New Zealander in the group asked if I’d ever hiked any of the places in the photos. He hadn’t realized that it was my book… and I got an incredible ego boost when he realized who’s name was on the cover). We ate, we talked, and we finally got to bed sometime around 2am.

(As a side note – I was very glad to have squirreled a contacts case into my jacket, with a second one in my satchel. Definitely worth it for unexpected adventures like this)

At 4am, we headed out. A fun part of Nuuk is that it’s not huge… so we actually walked from the house to the trailhead. Some of the folks had crashed at the house, while others has camped out near the trailhead – we met them en-route, then headed up into the wind.

Of note – I’d originally had a water taxi tour scheduled for Saturday… but it had been delayed to Sunday due to the high winds. While I didn’t have my windproof layer with me, nor any of my standard mountaineering gear, the group had convinced me that they wouldn’t be necessary… I borrowed a rain-shell from my Art Museum friend, which ended up being quite warm enough to make the ascent.

An ascent which felt like a lifetime. The wind howled, nearly non-stop, and I fully understood why this would have been a horrid day to be on the water. As it was, I had to keep my head down the entire way, and keep myself moving throughout to avoid cooling off too badly… the temperatures in Nuuk were around 6 DegF. with windchill, and were well below zero up on the mountain summit if I had to make a guess.

That summit came, though, with beautiful sunrise views… even if my face had long since gone numb from the wind. We took shelter in the lee of a meteorological station just long enough to appreciate the views and the shelter, before starting back down again. In told, the whole adventure (door to door, including the walk back to my Airbnb) took around five hours. It felt like a lifetime, and I’ll freely admit that I fell into bed immediately upon my arrival back home.

It had been glorious – I couldn’t have asked for a more amazing start to my trip.

One last visit with the pets next door

Living in Wilsonville has been glorious – not in small part due to having some lovely neighbors. We give each other our space, but we do make time to connect every so often – and I tend to get recruited to watch their pets pretty regularly when they take weekend trips.

With a heavy heart, I had to say goodbye to this little micro-community that we’ve made.

Bethan and Courtney made dinner one evening, and invited me over – orange chicken with fried rice and broccoli, which just happens to be one of my favorites, sweetened an already sweet deal. I tried to help with the cooking, but instead ended up just cuddling with the various fuzzy roommates as a lovely chance to say adieu before I ventured forth.

It’s been a while since I’ve had occasion to really throw down and make a big, multi-course, fancy and fun dinner. Daniel and Erin’s visit had given me some change, but for some reason those hadn’t quite scratched the itch that I was feeling…

My poor neighbors. Subjected to such cruelty. Having to come over and get fed.

I don’t think they minded, so much.




The plan for the evening was a four-course meal. I’d say “nothing fancy”, but that wouldn’t quite be true… I was taking this as a chance to practice, to experiment, and to try a few recipes that I’d been wanting to try out. For quite a while, in one case!

Adding to the challenge was a new dietary restriction – I’ve cooked for vegetarians and for vegans, but never for someone dairy-free… That gave me some interesting leeway, but still put a block on many of my standard cooking practices.

I was aiming to follow the framework of a fancy Italian meal – small courses, planned and timed to flow into each other as best as possible.

Without further Ado – The meal!


Course 1 – A pasta course.

This one was a light starter, but with enough heft that we wouldn’t be distracted by hunger for the rest of the meal. Simple, clean, and pleasant:

Bucatini, tossed in a non-dairy butter sauce mixed with a tiny bit of truffle oil, with soppressata sausage, salt, and pepper added. Garnished with parsley, of course, since I’m not a savage.




Course 2 – A veggie course.

I’ve been wanting to cook this for years, even since trying it while visiting Rome back in 2018. Judaean Artichokes! Trimmed, spread out, and oiled with truffle oil, olive oil, salt, and pepper.

My neighbors were kind enough to bring over an air fryer, so I didn’t have to deep-fry them like the recipe calls for – and I’ll say, they turned out beautiful! There’s far less meat on an artichoke than I remembered, so this one was a good “rest” course, where peeling the artichoke was as much an event as eating it was. It gave us a good chance to chat and relax before the main course.




Course 3 – The main event

This was going to be a challenge.

See, I love cooking steak, and I love making fancy steak. One of my favorite “show off” dishes is a variant of Steak Au Poivre, where I flambe fillet mignon in a brandy sauce. But you see… that works because the brandy flames work with the butter and steak juice, making a glorious base for the heavy cream.

None of which are dairy-free. As a variant, I grabbed non-dairy butter along with oat heavy cream, but this was definitely going to be a challenge.

In the end… the steaks came out well, but the sauce was a bust. I tried my best, I really did, but the non-dairy butter that I got just… didn’t quite work. Somehow it opened the grains in my skillet and caused the brandy to… seep through? Or something? Which meant that, when I lit it up, it didn’t really mix or caramelize at all, and instead just set the whole pan on fire. Literally the whole pan. All sides.

I was able to get the sauce together by using a ton of fake-butter and oil, but when it did come out… It was somehow a chocolate sauce? I don’t know what I did, but I think the sweetness and nuttyness of the oat milk combined in some arcane dark ritual.

End the end, the steak was excellent on its own – especially when paired with the solid full-bodied red wine that I’d picked out.




Course 4 – Dessert

For dessert, we had chocolate cake and vanilla ice cream!

“But Ben, those aren’t dairy-free!”

“You’re right, other Ben! But I MADE THEM DAIRY-FREE!”

The ice cream was easy. I bought non-dairy ice cream. Boom, done.

The cake? Vegan chocolate cake, one-mug, in the microwave. Boom, done and delicious.


The wine pairing? Loganberry aperitif – sweet, sparkling, and a glorious pairing… especially with the tiny bit of cherry juice that I added to the cake batter 😀




I’m quite proud with how everything came out. Definitely a fun evening!
